Ravida blends three local olive varieties picked from their 300 year-old trees - Nocellara, a slightly fruity eating olive, Carasuola, tasty and full-bodied and light green, Brancolilla for distinctive color and fragrance. Additionally, unfiltered Ravida's acidity level is an astonishing .010 - 0ne-tenth of 1%. The Ravida family, Sicilian since the 1300's, uses their oil for everything from cooking meat and fish, seasoning vegetables, salads, risotto and pasta.
