Originating with palomino grapes grown near Jerez, Spain, production of sherry vinegar begins with two fermentation. Vinagres de Yema Cepa Vieja and Gran Reserva are both created using a series of barrels called criaderas. Each criadera contains vinegar with similar flavor characteristics, but that have been agingfor different lengths of time. When the solera, the barrel with the oldest vinegar, is tapped for bottling, it is never fully drained. Instead, the remaining vinegar is then blended with vinegar from the next younger criadera, and so on through the series of barrels untillthe youngest is topped off with fermentedmust. Oncethe youngest vinegar has acetitied, it is then introduced with the blended vinegar criadera. The oldist vinegar in Cepa Vieja is 40 years. The complexity of the deep flavor and consistency of Vinagres de Yema porducts rival the tradizionale balsamics of Modena. Cepa Vieja has 7% acidity. Use On vegetables, salads, marinades and Vinaigrettes.
